We attempt to accomplish this by daily featuring Literature artists from around the community that deserve the recognition, but are not getting it. One tip though, you're pressing a key to deselect after every line?
Double click on the pencil tool in the toolbar. A little menu will pop-up. At the bottom you see "edit selected paths". The box in front of it is probably checked. Uncheck it, and you're done! Illustrator won't edit your lines anymore
Edit Selected Paths is actually a REALLY USEFUL feature. It makes drawing almost like sculpting. No need to delete and redraw, no need to adjust anchor points, no need to switch to any different tool at all. I use it to make a quick stroke in approximately the correct shape, then refine it with further strokes until it's just right. Very intuitive, very quick. Making a deselect hotkey is a small price to pay to have access to this.
