If you turn off "edit selected paths" in the tool options dialogue (double click the tool in the toolbar) that accidentally changing lines that are near your new line thing stops.
Nice tutorial. One tip though, you're pressing a key to deselect after every line? Here is something to make your life easier:
Double click on the pencil tool in the toolbar. A little menu will pop-up. At the bottom you see "edit selected paths". The box in front of it is probably checked. Uncheck it, and you're done! Illustrator won't edit your lines anymore
I've had this mentioned to me several times now, so I really should get around to updating the tutorial. But until then I'll say it here:
Edit Selected Paths is actually a REALLY USEFUL feature. It makes drawing almost like sculpting. No need to delete and redraw, no need to adjust anchor points, no need to switch to any different tool at all. I use it to make a quick stroke in approximately the correct shape, then refine it with further strokes until it's just right. Very intuitive, very quick. Making a deselect hotkey is a small price to pay to have access to this.
